The acerola cherry, lat. malpighia glabra, also known as the "cherry of the Antilles", originates from Central America and is now mainly cultivated in Brazil. The 2 to 3 meter high shrub, which requires an average annual temperature of at least 26 °C to thrive, can produce up to 30 kg of fruit per year. The taste of the orange-yellow to dark red cherry-sized fruit is slightly tart and reminiscent of lemon.

We buy our raw materials directly from the producers,
pay fair prices and support the farmers and producers.
The acerola berry can be harvested several times a year, as it has several flowering and fruiting cycles in tropical climates. It takes around 3-4 weeks from flowering to the first fruits. However, the main harvest periods for our suppliers are November to April. Additional harvests can take place between May and August, depending on regional weather conditions and cultivation methods. Both red and green berries are harvested. The main difference between green and red acerola berries lies in their ripeness, nutrient content and flavor.
After harvesting, the acerola cherries are immediately transported to the production facilities.
The acerola berries delivered are washed in large containers with cold water. They are then placed in quarantine, where they are only allowed to leave after a successful laboratory check.
During spray drying, the selected fruits are processed into a viscous mass in a special basin. Using the carrier maltodextrin, the powder extract is produced in state-of-the-art dry spraying systems. The end product trickles directly from the spray towers into bags.
After harvesting, the acerola fruits are immediately processed into puree, pasteurized and frozen at temperatures of -25°C to -35°C. At these low temperatures, the puree freezes quickly, avoiding the formation of large ice crystals. The fruit is defrosted in special drying chambers in which the water changes directly from a solid to a gaseous state under vacuum. This freeze-drying process is called sublimation and takes place at low temperatures of -12°C to a maximum of -25°C until the moisture content is less than 5%.
On average, the ratio between acerola raw material and powder is 17:1, i.e. 1 kg of powder is produced from 17 kg of raw material.
To produce the freeze-dried powder with 30% vitamin C content, mainly green berries are used, as these contain more vitamin C than red berries.
Finally, the end product is tested in the laboratory and a reference sample is stored. After approval, the acerola powder is ready for dispatch.
Do you want to buy acerola? Then note the crucial difference between vitamin C from natural sources and that produced synthetically: vitamin C from natural sources is not the only molecule that is absorbed by the body. In addition to vitamin C, acerola cherries also contain bioflavonoids (secondary plant substances), which have an antioxidant effect.
Vitamin C is the umbrella term, while ascorbic acid is the main chemical form of it. Natural sources often provide additional nutrients that can improve absorption, while synthetic ascorbic acid is a convenient supplement form.
The name ascorbic acid was derived from the term "anti-scorbutic acid". The well-known seafaring disease "scurvy" occurred in seafarers when they did not consume vitamin C for a long period of time, i.e. suffered from a vitamin C deficiency. The term "ascorbic" means "without scurvy".
The term "vitamin" is derived from the Latin word "vita" and means "life".
A distinction is made between fat-soluble and water-soluble vitamins. Water-soluble vitamins, such as vitamin C, must be taken regularly - ideally daily - as they cannot be stored by the body in the long term.
According to the German Nutrition Society (DGE), the daily requirement for vitamin C is between 90 and 110 mg for adolescents aged 15 and over and adults. Even with an increased vitamin C requirement, such as in stressful situations, heavy physical work, for smokers (they need approx. 40 % more vitamin C), there are no negative long-term consequences or side effects. People with kidney dysfunction or a higher risk of urinary stones should not exceed the recommended daily amount.
Acerola lozenges or acerola fruit powder provide your body with natural vitamin C and make an important contribution to your health.
A small addition of acerola powder with 17 % natural vitamin C accelerates the maturing process and improves the shelf life of the flour.
Just 0.1 % acerola powder in relation to the amount of flour is sufficient.
The powder also has a positive effect on kneading and the stability of the dough, which becomes more elastic and easier to shape. During the final "rising" process, the dough can better trap the carbon dioxide produced during yeast fermentation, which makes the end product more airy and shapely.
It is remarkable that even such a small amount of acerola fruit powder has a noticeably positive effect on the dough - and also offers added health benefits thanks to the vitamin C it contains. Although vitamin C is broken down by heating, a small amount is still retained in the baked end product.
A "normal" acerola powder contains 17% vitamin C. If the cherries are processed into a fruit powder with 30% natural vitamin C using a highly complex production method known as "freeze-drying", this powder deserves to be called "high-dose". Just 1 g of acerola powder contains 300 mg of pure vitamin C, compared to 170 mg of vitamin C in spray-dried acerola powder.
