Yacon is a brownish to purple root tuber from the Andes, which can weigh up to 1 kg. It resembles our radish or sweet potato.
It has been a valuable staple food for the locals for centuries. The tender tuber flesh is eaten as a vegetable, salad or simply raw. The taste of the yacon tuber is reminiscent of a refreshingly sweet honeydew melon or pear.
Yacon is therefore not a vegetable, but - due to its high fructose content - a fruit.
Due to its properties, the yacon root is also known as the "diabetic potato".

Valuable ingredients | Yacon contains a high level of polysaccharides (around 40-80% of the dry matter of the root). The tuber also contains flavonoids, phenolic acids and trypthophan (an amino acid that is a precursor of melatonin and serotonin). |
Prebiotic effect | Inulin and oligofructose, which belong to the polysaccharides, are indigestible dietary fibers for humans. They are metabolized in the intestine by protective bacteria such as lactobacilli and bifidobacteria. This produces short-chain fatty acids acetate, propionate and butyrate, which nourish our intestinal mucosa, lower the pH value in the large intestine and promote the excretion of amines and ammonium. The altered microbiome strengthens the immune system, counteracts inflammation and protects against infections. |

We source our raw materials directly from the producers.

The roots are ripe as soon as the outer skin of the root becomes slightly wrinkled.
They are harvested by hand and sorted out right next to the fields. Only the best tubers are collected in baskets and transported to the production facility.
The tubers are first scrubbed in large wooden basins with special brushes to remove the soil. They are then cleaned in a natural "disinfection bath".
Experienced employees sort the tubers a second time according to color and smell.
For "airing", the washed tubers are first placed in a dry room (also known as "airing") before final drying takes place. To do this, the tubers are cut into slices, spread out on special mesh trays and gently air-dried in a heat chamber at 40-45 degrees. This natural preservation process does not require any additives and is one of the gentlest methods of preservation. Once the moisture content of the yacon slices is below 6%, they can be ground into powder, which is then sieved to remove all larger particles.
After successful laboratory analysis, the product is packed in 1 kg PP bags, which await dispatch in cool storage rooms.
The name "yacon" comes from the South American Quechua language and is made up of the words "yakku" (tasteless) and "unu" (water, as the tuber contains a lot of water).
Our yacon thrives in the harsh climate of the Peruvian Andes, among other places. The tuber is very adaptable and is now also grown in warmer regions. It has even been successfully cultivated in Germany. The highly hydrated yacon root has always been used by the locals as a valuable staple food and remedy. It is cultivated in accordance with organic guidelines. The root is ripe when the outer skin becomes wrinkled. Only the best roots are selected by hand to produce the valuable yacon powder.
Yacon is suitable as a sugar substitute.
Reasons: Yacon has a high content of inulin and oligofructose, which belong to the so-called "fructooligosaccharides". These are natural sugar substitutes. Yacon powder has fewer calories than conventional sugar and has a milder sweetness. Oligofructose has between 30 and 50% of the sweetening power of sucrose, while inulin has around 10%.
Botanically, yacon belongs to the daisy family and is therefore related to stevia, among others. However, stevia products have a rather bitter taste and are reminiscent of sweetener, whereas yacon has a pleasant, sweet taste and, unlike stevia, is a high-quality prebiotic.
Like Jerusalem artichokes, yacon belongs botanically to the daisy family. However, as a source of inulin, yacon is more productive than Jerusalem artichokes. Yacon is not related to the sweet potato, which belongs to the bindweed family.
Yacon is botanically related to the following plant genera:
- Root vegetables: black salsify, Jerusalem artichoke, oat root,
- Fruit vegetables: artichoke, cardy (Spanish artichoke, vegetable artichoke),
- Medicinal herbs: elecampane, arnica, mugwort, camomile, dandelion, coneflower, wormwood.

The taste of the yacon tuber is reminiscent of a sweet honeydew melon or pear, in other words fruit. As the tuber grows underground, it is also known as "underground fruit".
Yacon tea made from fresh or dried leaves is traditionally drunk in South America to treat diabetes, due to its blood sugar and cholesterol-lowering effect. Unfortunately, yacon tea tastes extremely bitter, that is why most consumers prefer the use of yacon powder.
In industrialized countries, yacon is now considered a "superfood". The powder is suitable for the following applications:
The yacon tuber came to Europe from South America in the 16th century, but has never gained popularity. Outside of the Andean countries, only a few yacon cultivation areas are known to date, for example in Japan, New Zealand, Brazil and China since the 1960s. In Europe, the first cultivation trials were carried out in Italy in the 1920s. In the EU today, yacon plants are mainly grown in the Czech Republic. In Germany, there are a few yacon growers in Lower Saxony, Baden-Württemberg, Brandenburg and also in the southern Palatinate. They offer their products in regional shops and by mail order.
Larger quantities, such as those required for cakes, often lead to flatulence, especially if you are not used to prebiotics. Toxic side effects are not mentioned in the literature.
Use approx. 1 tablespoon (approx. 12 g) of yacon powder to sweeten yoghurt, muesli or smoothies as required. Yacon powder is very hygroscopic (moisture-attracting), thus always close the tin carefully after use!
